A Mexican Restaurant with humble beginnings, Zquila's origins begin in 1970 were the Chagolla family began dazzling patrons with their critically acclaimed cuisine at El Charro Mexican Restaurant in Greeley, Colorado. Following 38 years of success, Chef Louis Chagolla decided it was time and opened Zquila Mexican Restaurant in October 2008 in Fort Collins, CO. Equipped with his award winning Green Chili, and Secret ‘Perfect’ Margarita recipe, Chef Louis' cuisine took a mere month to be voted Best Mexican Restaurant in Fort Collins by the Official Fort Collins City Guide. And that's not all. Chagolla and his team continue to take the Colorado dining scene by storm wowing critics and customers alike.
